1 bowl breakfast cookie recipe

These cookies are quick and simple to make, using only 1 bowl and no food processor required.

I recommend them for;

On-the-go breakfast solution & pre and post-training/workout fuel.

They nourish the body with grains, plant based protein, healthy fat and natural sugars.


Makes 6 cookies

1 cup of rolled oats

1/4 cup of oat flour

1/4 cup of coconut oil

2 scoops of vanilla (plant based) protein powder, I recommend NuZest Clean Lean Protein 

1 egg, whisked

1/4 cup of honey

1/4 spoon of baking powder

1/4 spoon of baking soda

1 mashed banana

Small handful of dried fruit, raisins and cranberries work really well

Small handful of chocolate chips (semi-sweet, dark chocolate or cacao nibs, is what I recommend) – this can be omitted



Pre-heat oven to 160.

Line a baking tray with baking/ parchment/ wax paper.

Add all the ingredients to a large mixing bowl and stir until all combined.

Using a tablespoon, spoon out the mixture onto the baking tray into 6 evenly sized ‘cookie shapes’.

Place into the pre-heated oven for 12 minutes (or until golden brown).

Remove from oven and allow to cool on baking rack.


*To make this recipe Gluten Free use GF rolled oats.

*To make the recipe Dairy Free choose raw cacao nibs to replace chocolate chips or buy a dairy-free chocolate option.

These cookies kept me going while I watched my husband compete at the YAS Tri.
