Crunchy Granola Energy Bars

Cuisine: healthy snack, pre-workout snack

Serves: 8

This is a great ‘sugar free’ granola bar option as I use a natural sweetener called rice malt syrup to replace processed sugars.


150g of rolled oats (use GF oats if preferred)

2 tbsp of desiccated coconut

1 tbsp spoon of pumpkin seeds

1 tbsp of sunflower seeds

1 tbsp of milled/ ground flax seeds

(or use 3 tbsp of my Omega Mix)

3 pitted dates, cut into small pieces – or replace with your favourite dried fruit

1 tbsp of cacao nibs (can be omitted or placed with chocolate chips)

3 tbsp of rice malt syrup

5 tbsp spoons of coconut oil


Preheat the oven to 150.

Add all ingredients into a large mixing bowl and stir until all the ingredients are combined.

Lined and grease a baking tray and pour in the mixture.

Lightly pat the mixture with the back of a spoon until evenly spread across the tray.

Bake in the oven for 20-25 minutes, until lightly golden brown.

Remove from the oven and allow to cool in the tray.

Once cool cut into bars and wrap individually for an on-the-go high-energy snack.


*Rice malt syrup is a complex carbohydrate blend of glucose and maltose, which is completely fructose-free.
